 After roasting the coffee beans , they fall into a drum that continues to move the bean in order to cool them down.
Once the beans reach room temperature they are ready to be packed. It is important to pack the beans once roasted to avoid exposing them for long periods of time with oxygen. The reason behind this process is that if the beans are less oxidized, it is more likely that they will not lose their aroma and flavor.
Even at room temperature, the coffee beans continue with a chemical reaction process that extends beyond the time of roast. That is why it is important that the bags where they are packed have an unidirectional valve . An unidirectional valve allows the gases that continue to emit the grains to escape the packing, but nothing can enter the packing.  If the bags did not have these valves they would explode.

It is not a matter of simply packaging the product. The material from which the bags are made should be of a triple aluminum foil.
There are many myths about how to keep coffee onceits roasted. Coffee has the capacity to absorbed odors. For example in a perfumery coffee beans are commonly used to neutralize your olfactory sensors, so that you can perceive a new scent. If coffee is placed in a refrigerator, the smells of the refrigerator disappears. This tells us that coffee absorbs scents and odors; as a result, the original flavor and aroma changes.
We recommend to keep your coffee in a cool dry place. ​
